Savory Sweet Potato Hash

Sweet potatoes are the go to staple food for busy mom’s looking for a tasty side for the family and those of us with high activity levels throughout the week looking for a low carb solution to workout recovery.  There are many ways to enjoy sweet potatoes at the dinner table (I even enjoy them at the breakfast table sometimes!).  Today we will be talking about cubing and baking them to create a fantastic sweet potato hash that is going to knock your socks off!

Ingredients are as follows:
  • 3lb of Sweet Potatoes or Yams
  • 1 Green Pepper (you can sub Yellow or Red peppers also)
  • ½ red onion chopped
  • (Optional) 1 Jalapeño pepper diced
  • 2-3 tb extra virgin olive oil
  • 1 tsb kosher salt
  • ½ tsp black pepper

Steps for preparation:


  • Preheat oven to 400 degrees F
  • Peel the sweet potatoes and cut them into even size cubes
  • Put the sweet potatoes, onion, peppers, and other ingredients into a large bowl and mix everything up
  • Line a sheet pan with aluminum foil and add the potato mixture
  • Roast for 35-40 mins until soft enough to put a fork through without a lot of force
  • Ensure that you shake the pan halfway through so that all the potatoes cook evenly
  • Sprinkle with more salt and pepper when done

As I said before these can be enjoyed as a great side.  However, my favorite way to eat these is alongside some over-easy eggs (usually 4-5 of them).  The yolks mix well with the potatoes to make a great ‘buttery’ coating which is very savory.  Now you have your go to side dish for a family ready to feast, or that post workout recovery your body is craving!
